Vanilla Cake Pop recipe
Ingredients:
Vanilla cake
- 120g softened unsalted butter
- 150g unrefined caster sugar
- 1 tsp vanilla extract
- 2 free range eggs, at room temperature
- 180g self-raising flour
- 4 tbsp milk, at room temperature
Vanilla cream cheese frosting
- 80g softened unsalted butter
- 40g softened cream cheese
- 200g icing sugar, sifted
- 1 tsp vanilla extract
You will also need
- 400 g (1 bag) of candy melts
- Vegetable oil
- Lollipop stick
Procedure:
Preheat oven to 180Ā°C/Gas Mark 4 and lightly grease and flour a 25cm round cake tin or a 20cm square cake tin.
For about 5 minutes mix the butter and sugar until it turns pale and fluffy And Mix the vanilla extract into the creamed butter and sugar.
Add the eggs and mix well and keep adding milk and flour until fully combined.
Pour the mixture in the greased tins and bake for 35-45 mins once baked, let it cool on a wire rack. Meanwhile, you can start preparing for the vanilla cream cheese frosting, in a bowl mix butter and cream cheese properly and add sugar.
The mixture needs to get fluffy and light and then add in the vanilla extract.
You can now refrigerate the mixture for 30 mins.
Crumble the mixture by your hand in a bowl and make sure there are no lumps. This can also be done using a food Processor. Then add the cheese and vanilla frosting and mix it up well. Do not pour too much frosting as it might become soggy, heavy and might fall off the sticks. Once the mixture is prepared wrap it with a film and refrigerate it for at least an hour. Make small balls out of the mixture and gain refrigerate them for 15- 20 mins by putting them on the baking paper. In the same time melt the candy melts by placing them in a microwave- safe bowl and heating them for 1 minute. Stir the melted candy well and place it back in the microwave for 30 seconds. To make it smooth add 1-2 tablespoons of vegetable oil. This will help get the consistency of the candy mixture. Take lollipop sticks and dip it into the mixture, and immediately insert the sticks in the centre of each cake ball. It should take 1 to 2 minutes for the cake balls to settle down and once they settle dip them into the candy mixture completely. Gently, tap the cake pop on the bowl and then remove the excess candy mix.
You can now either decorate them with sprinkles or sugar decorations. Let the cake pops dry for a while and then you can make elaborate designs.
