1/2 cup sugar
orange color and essence
fresh cream 200 ml
STEP 1- Cut the oranges in half.Squeeze the juice from the orange.
STEP 2 -Scoop the balance pulp from the Orange half.Such that it looks like a bowl.We will use this to pour an set mousse.
STEP 3-Separately,pour 1 1/2 tsp of gelatin in warm water and mix till it completely dissolves.This is a cheat method.The correct way to do this is to melt the gelatin on a double boiler**.
STEP 4-In a deep pan heat the orange juice and add sugar and gelatin.Keep stirring so that no lumps are formed.Add Orange colour and essence.(this is optional)
STEP 5-Now take ice in a bigger pan.Place this smaller pan in it and start beating the liquid.
STEP 6-Beat till fluffy .Now add fresh cream little by little and continue beating.
STEP 7-Once desired consistency is reached,stop(or else you might curdle the mix)
STEP 8-Pour the mix in the orange cups
STEP 9-Grate some Orange rind on top for the look and slight bitterness in taste ,which goes very well with the mousse’.(I do not put rind for my kids though)
STEP 10-Put these orange cups in fridge for 2-3 hrs for setting.Tada!
