Healthy Tiffin Recipes

Recipes: Cottage Cheese Paratha
Ingredients:
Paneer 1 Medium Square sized
Dough
Coriander
Salt
Red Chilli Powder
Oil for Cooking
Method:
Keep the Salted (Salt to taste) Dough ready.
Cut paneer into little cubes
Mix Blanched Coriander,  Salt to taste, Pinch Red Chilli Powder to Paneer Cubes
Roll the dough to Make a Roti, put the Paneer Mix in the centre, wrap it and Roll it again to round
Cook it on Tawa using oil
Healthy & Tasty Cottage Cheese Paratha is ready
Serve it with Ketchup, Curd, whatever the Child prefers.
Recipe 2:  Spinach Poori
Ingredients:
Spinach 10-15 Leaves
Whole Wheat Flour
Salt
Red chill Powder
Oil
Method:
Blanch the Spinach leaves, add them to a bowl of Wheat Flour (A spoonful of Sooji can also be added at this point) , Salt to Taste and Pinch Red chilli Powder and prepare a dough
Heat oil in a Kadhai, roll little circles out of the dough and fry them once the oil is heated
Yummy Spinach Puri is ready to be served.
Recipe 3: Appe (Appay)
Ingredients:
Sooji
Tomato
Onion
Cabbage
Capsicum (Optional)
Coriander
Chat Masala
Red chilli Powder
Salt
Curd
Fresh cream
Oil
Method:
Mix one bowl Sooji with One bowl Curd and keep it aside
Finely Chop all available veggies (one small bowl-full) and mix them with the Sooji-Curd mix.
Add Salt to taste,  Chat Masala, Pinch Red Chilli Powder
Keep the consistency of the batter similar to that of Idli Batter
Add spoonful Fresh Cream
Pour teaspoon oil in each circle of the Appe Kadhai
Put batter in each of them so as to make balls
Cook them until Golden Brown from each side
Serve with ketchup

Her Story: Toddlers are fussy eaters and I feel blessed to have One :-D. My Daughter is a Preschooler who is very Choosy; so I have to make sure to prepare something that fills her hungry stomach at school keeping in mind she will like what I send for Tiffin. One thing I’ve learnt in her six months of Preschooling is  that irrespective of what fuss they create at home; they are much decent eaters at School. This is the right time that you can introduce new Foods and Spices (if you haven’t already). Mine is a “Mummy Mirchi” types Girl so I add a pinch of Spice to whatever I prepare so that she starts eating food that includes Spices too apart from just Salt. Most Schools have already begun and it’s time to get busy racking brains about what to fill in the lunchboxes again! We need to make sure of keeping the lunchbox interesting and nutritious at the same time, without having to spend hours in the kitchen for this purpose. Listing down few Lunch Box recipes I do for my close to 3 year old Princess.
