Recipe Ancient Grains Risotto : Chef Savy

Ingredients 

30 gms Millet
30 gms Barley
30 gms Jowar
1/2 a spoon chopped garlic
1/2 a spoon chopped onion
5 ml olive oil
Sprig thyme (chopped)
50 gms roasted Pumpkin
4l30 gms Mushroom
10 gms Grated Paremesan cheese
Pumpkin seeds to garnish
White wine
Vegetable stock

Method 

In a pan heat oil and sauté onion, garlic, thyme and mushroom.
Add Jowar,  barley and millet and sauté
Deglaze  the pan with white wine and add roasted Pumpkin mash.

Cook the grain and keep adding vegetable stock as reqd.

Garnish with Parmesan cheese and pumpkin seed and serve.
