This awesome pickle recipe has been passed to me from my mom and she learned this from her mom. Honestly, if I learned everything from my mom and Nani I would this awesome cook and homemaker but you know me when I have them to do it for me why put the effort ;)?

Nevertheless sharing this one with you, hope you like it.

Kathal ka achar or Jackfruit Pickle

Cut the jackfruit into 2″ size small pieces-wash it-boil in water for 10 minutes. Check it should not be overcooked. Now drain all the water put pieces on a clean cloth keep it in the sun so that it will dry while drying turn both sides and add the masala.

Ingredients;

For 1kg Kathal you need

1cup coriander seeds

1cup fennel seeds(saunf)

2tsp fenugreek

2tsp onion seeds( clounji)

Dry roast the masala and mix 2-3tsp turmeric powder, 2-3 tsp of chilly powder, 1/4 tsp asafoetida, some garlic cloves, 1/4cup vinegar, mix all of these. Keep in an airtight jar now put mustard oil to cover all ingredients.
